Salmon Loaf

Ingredients

  • 1 can (16 ounces) salmon
  • 2 cups bread crumbs, soft
  • 1 large onion, chopped
  • 1 tablespoon margarine, melted
  • 1/4 cup celery, diced
  • 1 cup 1% low fat milk
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley
  • 2 large eggs

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 325 degrees F.
  3. Drain salmon and remove skin if desired.
  4. Mash bones with meat.
  5. Add the other ingredients.
  6. Add enough milk so that the mixture is moist but not runny.
  7. Place in a lightly oiled 9x5 inch loaf pan.
  8. Bake for 45 minutes.
  9. Serve.
