Fresh Tomato Soup
6 servings · 5 min prep · 25 min cook
Ingredients
- 4 cups chopped fresh tomatoes
- 2 cups chicken broth
- 4 cloves garlic
- 1 slice onion
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 teaspoons white sugar, or to taste
- 1 teaspoon salt
Method
- Gather all ingredients before starting.
- In a stockpot, combine the tomatoes, chicken broth, garlic, and onion slice. Bring to a boil, then simmer 15-20 minutes to blend flavors.
- Remove from heat and pass the mixture through a food mill into a bowl, discarding the solids left behind.
- In the same pot, melt the butter over medium heat, then whisk in the flour to make a roux, cooking until it turns medium brown.
- Slowly whisk in some of the tomato mixture to avoid lumps, then stir in the remaining liquid.
- Season with sugar and salt to taste.
- Serve hot.
