8 servings · 20 min prep · 40 min cook
Ingredients
- 2 teaspoons olive oil
- 2 pounds Italian sausage links, cut into 2-inch pieces
- 0.25 cup olive oil
- 4 large potatoes, peeled and thickly sliced
- 2 large green bell peppers, seeded and cut into wedges
- 2 large red bell peppers, seeded and cut into wedges
- 3 large onions, cut into wedges
- 0.5 cup white wine
- 0.5 cup chicken stock
- 1 teaspoon Italian seasoning
- salt and freshly ground black pepper to taste
Method
- Preheat oven to 400°F (200°C).
- Heat 2 teaspoons of olive oil in a large skillet over medium heat and brown the sausage pieces, about 5-10 minutes. Transfer to a large baking dish.
- Add 1/4 cup olive oil to the same skillet and cook the potato slices, stirring occasionally, until browned, about 10 minutes. Add to the baking dish, leaving some oil behind.
- In the same skillet, cook the peppers and onions until just starting to soften, about 5 minutes.
- Add the vegetables to the baking dish with the sausage and potatoes. Pour in the wine and chicken stock, then season with Italian seasoning, salt, and pepper.
- Gently mix everything together in the baking dish.
- Bake until hot and bubbling, 20-25 minutes. Serve hot.
