- ½ tsp garlic powder
- 3 tbsp extra virgin olive oil
- 3 cloves garlic (minced)
- 4 large beef steak tomatoes (diced *see notes)
- ¼ cup purple onion (diced)
- ¼ cup basil (thinly sliced into ribbons)
- 1 tbsp balsamic vinegar
- 1 tsp salt
- ½ tsp black pepper
Method
- Set the oven broiler to high heat.
- Line a baking sheet with foil, arrange baguette slices on it, spray or brush with olive oil, and sprinkle with garlic powder.
- Broil the bread for a minute or two until golden, then flip and repeat on the other side.
- While the bread toasts, warm the olive oil in a small skillet over medium heat, add garlic, and stir briefly without letting it burn.
- Pour the garlic-infused oil into a large bowl and let it cool.
- Once cooled, mix in the diced tomatoes, onion, basil, balsamic vinegar, salt, and pepper.
- Spoon the tomato mixture over the toasted baguette slices and serve.
