Ingredients

  • 1.5 lbs ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method

  1. Heat the oven to 375°F (190°C) and prepare a baking sheet with parchment or a lightly greased loaf pan.
  2. In a large bowl, mix the ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper until just combined.
  3. Shape the mixture into a loaf on the baking sheet or press into the loaf pan. Bake 35-40 minutes until cooked through and firm.
  4. Take the meatloaf out, top with extra mozzarella, and bake another 5-7 minutes until the cheese melts and bubbles.
  5. Rest the meatloaf 5 minutes before slicing. Garnish with parsley and serve.
