Instant Pot Chicken Thighs
8 servings · 4 min prep · 12 min cook
Ingredients
- 2½ pounds boneless, skinless chicken thighs (*)
- 1 cup low-sodium chicken broth (**)
- 1 teaspoon Italian seasoning
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Method
- Mix the seasonings in a bowl and rub them on both sides of the chicken thighs.
- Optionally, sauté the chicken in the Instant Pot (or on the stovetop) for 1-2 minutes per side to brown and lock in flavor.
- Place the trivet in the Instant Pot and arrange the chicken thighs on top.
- Pour the chicken broth directly over the chicken.
- Seal the lid and cook on high pressure for 12 minutes (add 3 extra minutes if you plan to shred the chicken).
- Once cooking is complete, release the pressure, then let the chicken rest for 5 minutes before serving.
