Quick Creamy Potato Soup

Ingredients
- 8 slices bacon
- 1 cup chopped onion
- 4 cups cubed potatoes
- 2 (10.75 ounce) cans condensed cream of chicken soup
- 2.5 cups milk
- salt to taste
- ground black pepper to taste
- 1 teaspoon dried dill weed
Method
- Cook bacon in a large saucepan until crisp, then remove and set aside, leaving about 3 tablespoons of bacon fat in the pan.
- Cook the onions in the bacon fat over medium heat until browned.
- Add the potatoes along with enough water to cover them. Cover the pan and cook 15 to 20 minutes until the potatoes are tender.
- Whisk the soup and milk together until smooth, then stir into the potato mixture. Warm through without letting it boil.
- Season with salt and pepper, then stir in the dill weed.
- Crumble the bacon and stir it into the soup or sprinkle on top before serving.
