Tuscan Sausage Pasta Bake

Ingredients
- 1½ lb lean turkey Italian sausage
- 8 oz dry protein pasta (Goodles curveballs)
- 40g sun-dried tomatoes, chopped
- 1 shallot, diced
- 4–5 cloves garlic, minced
- 2 tbsp tomato paste
- 2¼–2½* cups chicken broth
- 2 cups baby spinach
- 4 oz ⅓-less-fat cream cheese
- 1 cup fat-free cottage cheese, blended smooth
- ¼ cup freshly grated Parmesan
- 2 cups reduced-fat shredded mozzarella
- ¼ cup additional Parmesan for topping
- Fresh basil, optional
- 1 tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp dried basil
- ½ tsp dried oregano
- ½ tsp black pepper
- ¼–½ tsp salt
- ¼ tsp red pepper flakes, optional
