Pancakes (from Better Baking Mix)

Using a pre-made baking mix -- like our Better Baking Mix -- is a great shortcut to making homemade pancakes! USDA MyPlate Kitchen — Washington State University Extension (public domain), via myplate.food

Ingredients

  • 2 Better Baking Mix
  • 1 cup water
  • 2 tablespoons vegetable oil
  • 2 eggs — beaten

Method

  1. Wash hands with soap and water.
  2. Put all the ingredients in a bowl.
  3. Stir just enough to moisten dry ingredients.
  4. Preheat skillet on medium-high heat.
  5. The skillet is ready when drops of water "dance" on the dry surface.
  6. Add a teaspoon of vegetable oil or use cooking oil spray.
  7. For each pancake, pour 3 to 4 tablespoons of batter onto hot skillet.
  8. Cook slowly until the surface is covered with bubbles.
  9. Turn and cook until second side is lightly browned.
