Oat Bran Muffins

Ingredients

  • 2 1/4 cups oat bran
  • 1/4 cup brown sugar, firmly packed
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon baking powder
  • 1 large egg
  • 1/2 cup orange juice
  • 3/4 cup non-fat (skim) milk
  • 2 tablespoons canola oil
  • 3/4 cup unsweetened applesauce
  • 1 medium banana, mashed
  • 2 tablespoons raisins, dates, or other dried fruit

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 425 degrees F.
  3. In a large bowl, mix the first four dry ingredients.
  4. Set aside.
  5. In another bowl, mix the egg with orange juice, milk, and oil.
  6. In small bowl, mix fruit and blend with dry ingredients.
  7. Add the liquid ingredients to the dry until it is moist.
  8. Spray muffin tin with a non-stick coating.
  9. Pour batter into muffin tins.
  10. Bake for 15 to 17 minutes.
  11. Remove muffins from pan after 10 minutes.
  12. Cool on a rack.
  13. Freeze muffins for later use.
