Mozzarella Chicken with Garlic Spinach

Ingredients

  • 8 small chicken breast halves, skin and bone removed
  • 1/2 cup Italian seasoned breadcrumbs, crushed
  • 8 ounces part skim mozzarella cheese, shredded
  • 1 tablespoon canola oil — or cooking oil of choice
  • 4 cloves garlic, minced
  • 2 packages (10 ounces each) spinach leaves

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 400 degrees F.
  3. Place chicken between 2 sheets of plastic wrap; pound chicken to 1/4 inch thick.
  4. Coat chicken with breadcrumbs and place on foil-covered baking sheet.
  5. Discard remaining breadcrumbs.
  6. Bake 10 minutes.
  7. Top chicken with cheese; bake 4 to 5 minutes until cheese is melted and chicken reaches an internal temperature of 165 °F.
  8. Meanwhile, heat oil in a large skillet on medium heat.
  9. Add garlic and stir 1 minute.
  10. Add half the spinach and cook 1 minute.
  11. Add remaining spinach.
  12. Cook until wilted, turning occasionally.
  13. Serve with chicken.
