Mock Southern Sweet Potato Pie

Ingredients

  • Crust:
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon sugar
  • 1/3 cup fat-free (skim) milk
  • 2 tablespoons vegetable oil
  • Filling:
  • 1/4 cup white sugar
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3 large eggs, beaten
  • 1/4 cup fat-free evaporated milk, canned
  • 1 teaspoon vanilla extract
  • 3 cups cooked sweet potatoes, skin removed and mashed

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F.
  3. Crust: Combine the flour and sugar in a bowl.
  4. Add milk and oil to the flour mixture.
  5. Stir with fork until well mixed and then form pastry into a smooth ball with your hands.
  6. Roll the ball between two 12-inch squares of waxed paper using short, brisk strokes until pastry reaches edge of paper.
  7. Peel off top paper and invert crust into pie plate.
  8. Filling: Combine sugars, salt, spices, and eggs.
  9. Add milk and vanilla.
  10. Stir.
  11. Add sweet potatoes and mix well.
  12. Pour mixture into pie shell.
  13. Bake in preheated oven for 60 minutes or until crust is golden brown.
  14. Cool and cut into 16 slices.
