Green Bean and Mushroom Medley

Ingredients

  • 3 cups fresh green beans — cut into 1-inch lengths
  • 2 carrots — cut into thick strips
  • 3 tablespoons olive oil
  • 1 large onion — sliced
  • 1 pound fresh mushrooms — sliced
  • 1 teaspoon lemon pepper seasoning
  • 1/2 tablespoon garlic salt
  • 1/4 cup almonds — toasted, slivered

Method

  1. Wash hands with soap and water.
  2. Place green beans and carrots in 1 inch of boiling water.
  3. Cover, and cook until tender but still firm.
  4. Drain.
  5. Add oil to heated skillet.
  6. Sauté onions and mushrooms until almost tender.
  7. Reduce heat, cover, and simmer 3 minutes.
  8. Stir in green beans, carrots, lemon pepper, garlic salt, and toasted almonds.
  9. Cover and cook for 5 minutes over medium heat.
