  • 2 cups green beans — trimmed into 1" pieces
  • 1 tablespoon olive oil or cooking oil
  • 1 tablespoon sesame oil
  • 2 tablespoons reduced sodium soy sauce
  • 2 1/2 tablespoons lemon juice
  • 1/4 teaspoon ground ginger

Method

  1. Wash hands with soap and water.
  2. Toast quinoa in a dry skillet over medium heat, stirring constantly for about 3 minutes.

  4. Bring to a boil, then let simmer until all of the water is absorbed and quinoa is tender (10 to 15 minutes).

  9. In a large bowl, combine the quinoa, green beans, olive oil or cooking oil, sesame oil, soy sauce, lemon juice, and ground ginger.
  10. Stir well.
  11. Season with salt and pepper, as needed.
  12. Serve warm or at room temperature.
