Fried Rice

Ingredients

  • 1 tablespoon vegetable oil, divided — or cooking oil of choice
  • 2 eggs, beaten
  • 3 1/2 cups cooked brown rice
  • 1 cup cooked chopped chicken breast — could also use cooked ham or pork
  • 1 cup frozen mixed vegetables
  • 2 green onions
  • soy sauce or hot sauce — optional, to taste

Method

  1. Wash hands with soap and water.
  2. Heat pan.
  3. Add 1 teaspoon of oil.
  4. Add eggs and scramble.
  5. Remove cooked eggs and set aside.
  6. Add the rest of oil (2 teaspoons) and rice to pan.
  7. Stir fry rice, breaking up lumps by pressing rice against pan.
  8. Add cooked meat and vegetables.
  9. Stir fry until heated.
  10. Add green onions, reserved eggs and sauce to taste.
  11. Serve hot.
  12. Cover and refrigerate leftovers within 2 hours.
