Corn Salad with Fresh Basil and Lemon

Ingredients

  • 6 ears of corn — about 3 cups
  • 2 tablespoons chopped red onion
  • 2 tablespoons lemon juice
  • 1/8 teaspoon sugar
  • 2 tablespoons olive oil — or cooking oil of choice
  • 1 tablespoon chopped fresh basil — or 1 tsp dried basil

Method

  1. Wash hands with soap and water.
  2. Cook corn in boiling water or in the microwave.
  3. Cut corn from the cob.
  4. Add onion.
  5. In a small bowl, whisk together lemon juice and sugar.
  6. Add oil and combine.
  7. Stir the oil/lemon mixture and basil.
  8. And salt and pepper to taste (optional).
  9. Refrigerate at least 30 minutes.
