Baked Trout

Tangy lime, sweet tomatoes, and savory onions make this trout colorful and tasty. Ingredients

  • 2 pounds trout fillets, cut into six pieces — or other fish
  • 3 tablespoons lime juice — about 2-3 limes
  • 1 medium tomato — chopped
  • 1/2 medium onion — chopped
  • 3 tablespoons cilantro — chopped
  • 1/2 teaspoon olive oil — or cooking oil of choice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup fresh red pepper — chopped

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 350 °F.
  3. Pat fish dry and place in baking dish.
  4. In a separate dish, mix remaining ingredients together and pour over fish.
  5. Bake for 15 to 20 minutes or until fork-tender.
