Apple Chunk Cake

Ingredients

  • 1 1/4 cups sugar
  • 1/4 cup vegetable oil — or cooking oil of choice
  • 2 large eggs
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 4 cups apples, divided — 2 cups chopped into chunks, 2 cups sliced
  • 1/4 cup unsweetened applesauce

Method

  1. Wash hands with soap and water.
  2. Preheat oven to 350 degrees F.
  3. In a large bowl, mix sugar, oil and eggs together.
  4. Beat well.
  5. In a separate bowl, combine flour, salt, cinnamon, and baking soda.
  6. Add to egg batter and mix well.
  7. Add 2 cups of apple chunks and applesauce to the batter.
  8. Stir to combine.
  9. Coat an 8x8-inch baking pan with vegetable oil spray and pour in batter.
  10. Bake until done, about 1 hour.
  11. Place 2 cups of apple slices on top of apple cake and serve.
