Sesame Chicken

Ingredients
- 3 tablespoons cornstarch
- 2 tablespoons soy sauce
- 1 egg
- 1 pound boneless skinless chicken breasts (cut into bite size pieces)
- 2 teaspoons vegetable oil
- green onions (for garnish)
- ¾ cup chicken broth
- ¼ cup brown sugar (or honey)
- 2 tablespoons cornstarch
- 3 tablespoons soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon minced fresh ginger
- 1 clove garlic (minced)
- 2 tablespoons sesame seeds
Method
- Toast the sesame seeds in a dry skillet over medium heat until golden and fragrant, then set aside to cool.
- Combine chicken pieces with egg, 3 tablespoons cornstarch, and 2 tablespoons soy sauce; refrigerate for 15 minutes to marinate.
- Whisk together the broth, brown sugar, remaining cornstarch, remaining soy sauce, sesame oil, ginger, and garlic to make the sauce.
- Heat vegetable oil in a large skillet over medium-high heat. Stir-fry the chicken in two batches until browned and nearly cooked through, about 5 minutes each; set aside.
- Whisk the sauce again and pour into the skillet with all the chicken. Cook over medium-high heat, stirring, until thickened, about 3-4 minutes.
- Stir in the toasted sesame seeds.
- Garnish with sliced green onions before serving.
