Garlic Butter Chimichurri Steak Bites with Garlic Parmesan Mashed Potatoes

Ingredients

  • 2 pounds ribeye or sirloin steak, cubed
  • 1 tbsp neutral oil
  • 2 tsp Worcestershire sauce
  • 2 tsp garlic powder
  • 2 tsp @kindersflavors buttery steakhouse seasoning
  • 1 tsp kosher salt (or to taste)
  • 1/2 tsp black pepper
  • 2 tbsp Kerrygold garlic & herb butter
  • 1 bunch fresh Italian parsley, finely chopped (about 1 cup packed)
  • 2 Fresno chiles, finely diced
  • 4 garlic cloves, minced
  • 2 tbsp red wine vinegar
  • 3/4 cup extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp kosher salt
  • 1 tsp red chili flakes
  • Juice of 1/2 lemon (optional )
  • 6 medium Yukon Gold potatoes, peeled and quartered (about 2½–3 lbs)
  • 2 cups half-and-half (use as needed)
  • 4 garlic cloves, lightly smashed
  • 2 bay leaves
  • 3–4 sprigs fresh thyme
  • 4 tbsp (1/2 stick) Kerrygold Garlic & Herb Butter
  • 1/3 cup sour cream
  • 3/4 cup grated Parmesan cheese
  • 1 1/2 tsp kosher salt, plus more for the potato water
  • 1/2 tsp freshly cracked black pepper
