Toasted Marshmallow Syrup

Ingredients
- 1 cup of water
- 1 cup of sugar
- 2 cups of mini marshmallows
Method
- Combine the water and sugar in a saucepan over medium heat, stirring frequently for 10-15 minutes until the sugar dissolves and the syrup thickens slightly.
- While the syrup cooks, line a baking sheet with parchment paper and spread the mini marshmallows in a single layer. Broil on high until the tops are golden brown and toasted.
- Scoop the toasted marshmallows into the syrup, which should still be on low heat, and whisk until fully combined. Turn off the heat and remove from the burner.
- Pour the mixture through a fine mesh strainer to remove marshmallow bits, scooping off any residue that passes through.
- Once completely cooled, transfer the syrup to an airtight container. Store on the counter for up to two weeks, or longer if refrigerated.
