Chopped Apple Salad

Ingredients
- 2 medium Honeycrisp apples (cored and roughly chopped)
- 5-6 ribs celery (roughly chopped)
- 4 ounces extra-sharp white cheddar cheese
- ½ cup pecans (toasted or candied, option to use walnuts)
- ⅓ cup pitted dates (roughly chopped, about 5-6 dates)
- 1 small shallot (roughly chopped)
- ¼ cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon pure maple syrup
- 1 teaspoon Dijon mustard
- ½ teaspoon kosher salt
- freshly cracked black pepper (to taste)
Method
- Whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper in a small bowl to make the vinaigrette.
- Place the chopped apples, celery, cheddar, pecans, dates, and shallot on a large cutting board.
- Chop everything together with a chef's knife, gathering the pile back toward the center as you go, until the mixture is finely chopped but still has some texture.
- Drizzle the vinaigrette over the chopped mixture and toss and fold together on the board, adding more dressing to taste.
- Serve right away with kettle-style potato chips.
