Easy Tzatziki Sauce

Ingredients
- 1 English cucumber
- ½ teaspoon salt
- 1 ½ cups plain Greek yogurt (or plain yogurt)
- 2 tablespoons olive oil
- 1 ½ teaspooons fresh lemon juice (more to taste)
- 1 clove garlic (minced)
- 1 tablespoon chopped fresh dill
- salt and black pepper (to taste)
Method
- Grate the cucumber on the large holes of a box grater, then toss it with salt in a fine mesh strainer and let it drain for about 5 minutes while you prep the rest.
- In a medium bowl, mix together the yogurt, olive oil, lemon juice, garlic, and dill.
- Squeeze the excess liquid from the drained cucumber and stir it into the yogurt mixture; season with salt and black pepper to taste.
- Chill for at least 30 minutes before serving, and drizzle with extra olive oil if desired.
