Easy Chicken Fajitas
4 servings · 10 min prep · 15 min cook · Spend With Pennies
Ingredients
- 3 boneless skinless chicken breasts (approximately 1 pound)
- 1 medium onion
- 1 lime
- 3 bell peppers (red, yellow, green or orange)
- 3 tablespoons olive oil (divided)
- 1 teaspoon chili powder
- ¾ teaspoon salt (divided, more to taste)
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon cumin (optional)
Method
- Slice the onion into strips and cut the peppers into strips.
- In a bowl, mix 1 tablespoon olive oil, juice of half a lime, chili powder, paprika, onion powder, black pepper, cumin and ½ teaspoon salt. Cut chicken into strips and toss with this marinade.
- Heat 1 tablespoon olive oil in a pan over medium-high heat. Cook half the chicken until just done, about 3-5 minutes, then remove and set aside. Repeat with the remaining chicken.
- Add 1 tablespoon oil to the same pan. Cook the onions for 2 minutes, then add the peppers and remaining ¼ teaspoon salt. Cook another 2 minutes until just heated through. Return the chicken to the pan and stir to combine.
- Squeeze fresh lime juice over the mixture and serve in tortillas.
