Baked Chicken Broccoli Cheese Patties

Ingredients

  • 1 lb (450 g) cooked chicken breast, finely shredded
  • 1½ cups cooked broccoli, finely chopped
  • 1 large egg
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • ½ cup panko breadcrumbs
  • 2 tbsp cottage cheese
  • 1 garlic clove, minced
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ½ tsp salt
  • 1 tbsp fresh parsley, chopped
  • Olive oil spray

Method

  1. Steam the broccoli until tender, let it cool fully, then chop finely and squeeze out excess moisture.
  2. In a large bowl combine the chicken, broccoli, egg, mozzarella, Parmesan and cottage cheese.
  3. Mix in the garlic, onion powder, smoked paprika, black pepper, salt and parsley until evenly combined.
  4. Add the panko and mix until the mixture is firm enough to hold its shape.
  5. Form the mixture into 6 thick patties, about ½–¾ inch thick.
  6. Refrigerate the patties for 15–20 minutes to firm up.
  7. Preheat the oven to 425°F (220°C) and place patties on a parchment-lined baking sheet. Lightly spray both sides with olive oil.
  8. Bake for 10–12 minutes, then flip, spray again, and bake another 8–10 minutes until golden and crispy.
  9. For the final 1–2 minutes, switch to the broiler to crisp the tops, watching closely so the cheese doesn't burn.
  10. Let the patties rest for 2 minutes before serving.
