Baked Chicken Broccoli Cheese Patties

Ingredients
- 1 lb (450 g) cooked chicken breast, finely shredded
- 1½ cups cooked broccoli, finely chopped
- 1 large egg
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- ½ cup panko breadcrumbs
- 2 tbsp cottage cheese
- 1 garlic clove, minced
- ½ tsp onion powder
- ½ tsp smoked paprika
- ¼ tsp black pepper
- ½ tsp salt
- 1 tbsp fresh parsley, chopped
- Olive oil spray
Method
- Steam the broccoli until tender, let it cool fully, then chop finely and squeeze out excess moisture.
- In a large bowl combine the chicken, broccoli, egg, mozzarella, Parmesan and cottage cheese.
- Mix in the garlic, onion powder, smoked paprika, black pepper, salt and parsley until evenly combined.
- Add the panko and mix until the mixture is firm enough to hold its shape.
- Form the mixture into 6 thick patties, about ½–¾ inch thick.
- Refrigerate the patties for 15–20 minutes to firm up.
- Preheat the oven to 425°F (220°C) and place patties on a parchment-lined baking sheet. Lightly spray both sides with olive oil.
- Bake for 10–12 minutes, then flip, spray again, and bake another 8–10 minutes until golden and crispy.
- For the final 1–2 minutes, switch to the broiler to crisp the tops, watching closely so the cheese doesn't burn.
- Let the patties rest for 2 minutes before serving.
