Hemp Heart Oatmeal

Ingredients
- 1/4 cup Hemp Seeds (also called hemp hearts or hulled hemp hearts)
- 1 tablespoon Flaxseed Meal
- 1 teaspoon Chia Seeds
- 1 teaspoon Almond Butter
- 2 tablespoons Unsweetened Shredded Coconut
- 1/2 cup Unsweetened Almond Milk
- 1/2 tablespoon Granulated Sweetener (add up to 1 tbsp. if you have a sweet tooth)
- 1/2 teaspoon Vanilla Extract
- 1/4 teaspoon Ground Cinnamon
- 1 teaspoon MCT Oil Powder (optional)
- 1 tablespoon Berries
- 1/2 tablespoon Pecans (finely chopped)
- 1 teaspoon Sugar-Free Maple Syrup (optional )
Method
- Combine all the dry ingredients in a small saucepan: hemp seeds, chia seeds, flaxseed meal, shredded coconut, sweetener, cinnamon, and MCT oil powder if using.
- Whisk in the almond milk, vanilla extract, and almond butter until smooth.
- Cook over medium heat, stirring constantly with a wooden spoon, until it starts bubbling at the edges and thickens, about 3-4 minutes. Cook longer for a drier texture.
- Remove from heat, pour into a bowl, and let sit for 2-3 minutes to steam and thicken further before adding toppings like berries, pecans, or sugar-free maple syrup.
