Chicken Fajita Topped Sweet Potatoes

Ingredients

  • 2 sweet potatoes
  • Olive oil
  • Taco seasoning
  • 1 small white onion
  • 1 green bell pepper
  • 2 cloves garlic
  • 2 cups shredded chicken
  • ½ cup salsa
  • ½–1 cup shredded cheese
  • Water, as needed

Method

  1. Preheat oven to 400°F.
  2. Cut sweet potatoes lengthwise into even slices, about 4 per potato.
  3. Arrange slices on a baking sheet, brush lightly with olive oil, and sprinkle with taco seasoning.
  4. Bake 25 minutes, flipping halfway, until tender.
  5. Heat a skillet over medium heat with a little oil.
  6. Add diced onion, garlic, and bell pepper; sauté until softened.
  7. Stir in shredded chicken and sprinkle with taco seasoning.
  8. Add a splash of water to help the seasoning coat evenly.
  9. Stir in salsa and cook until heated through.
  10. Remove sweet potatoes from the oven and top each slice with the chicken fajita mixture.
  11. Sprinkle generously with shredded cheese.
  12. Switch oven to broil and broil 2–3 minutes until cheese melts.
  13. Add favorite taco toppings and serve.
