Chicken Fajita Topped Sweet Potatoes

Ingredients
- 2 sweet potatoes
- Olive oil
- Taco seasoning
- 1 small white onion
- 1 green bell pepper
- 2 cloves garlic
- 2 cups shredded chicken
- ½ cup salsa
- ½–1 cup shredded cheese
- Water, as needed
Method
- Preheat oven to 400°F.
- Cut sweet potatoes lengthwise into even slices, about 4 per potato.
- Arrange slices on a baking sheet, brush lightly with olive oil, and sprinkle with taco seasoning.
- Bake 25 minutes, flipping halfway, until tender.
- Heat a skillet over medium heat with a little oil.
- Add diced onion, garlic, and bell pepper; sauté until softened.
- Stir in shredded chicken and sprinkle with taco seasoning.
- Add a splash of water to help the seasoning coat evenly.
- Stir in salsa and cook until heated through.
- Remove sweet potatoes from the oven and top each slice with the chicken fajita mixture.
- Sprinkle generously with shredded cheese.
- Switch oven to broil and broil 2–3 minutes until cheese melts.
- Add favorite taco toppings and serve.
