Keto Peanut Butter Bars

Ingredients
- 1 ½ cup peanut butter or nut butter
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla
- Pinch of salt
- 4 tablespoons melted coconut oil, divided
- 7 oz sugar free chocolate chips
- Flaky Sea Salt
Method
- Combine peanut butter, almond flour, coconut flour, sweetener, vanilla, and salt in a bowl until well mixed. If the mixture is too dry, add 2 tablespoons of the melted coconut oil.
- Press the mixture into a parchment-lined square baking dish and freeze for about 30 minutes until firm.
- Melt the chocolate chips with the remaining 2 tablespoons of coconut oil, either in the microwave in short bursts, stirring between each, or using a double boiler.
- Pour the melted chocolate over the peanut butter layer and sprinkle with flaky sea salt if desired.
- Freeze for about 2 hours until the chocolate sets, then cut into 12 bars.
