Keto Peanut Butter Bars

Ingredients

  • 1 ½ cup peanut butter or nut butter
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla
  • Pinch of salt
  • 4 tablespoons melted coconut oil, divided
  • 7 oz sugar free chocolate chips
  • Flaky Sea Salt

Method

  1. Combine peanut butter, almond flour, coconut flour, sweetener, vanilla, and salt in a bowl until well mixed. If the mixture is too dry, add 2 tablespoons of the melted coconut oil.
  2. Press the mixture into a parchment-lined square baking dish and freeze for about 30 minutes until firm.
  3. Melt the chocolate chips with the remaining 2 tablespoons of coconut oil, either in the microwave in short bursts, stirring between each, or using a double boiler.
  4. Pour the melted chocolate over the peanut butter layer and sprinkle with flaky sea salt if desired.
  5. Freeze for about 2 hours until the chocolate sets, then cut into 12 bars.
