Slow Cooker Taco Pasta

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 1 cup salsa
  • 2 cups uncooked pasta
  • 1½ cups shredded cheddar cheese

Method

  1. Brown the ground beef in a pan and drain off the excess fat.
  2. Transfer the beef to the slow cooker with the taco seasoning, diced tomatoes, beef broth, and salsa.
  3. Cover and cook on low for 4-5 hours.
  4. Stir in the uncooked pasta during the last 30-40 minutes of cooking, until tender.
  5. Mix in the shredded cheddar cheese until melted and creamy.
  6. Serve hot, topped with extra cheese, cilantro, or sliced jalapeños if desired.
