Slow Cooker 5-Ingredient Beef Stew

Ingredients

  • 2 lb beef stew meat, cut into 1-inch cubes
  • 4 large carrots, peeled and sliced
  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cups beef broth
  • Salt and black pepper, optional, to taste

Method

  1. Add the beef cubes, carrots, potatoes, and chopped onion to the slow cooker.
  2. Pour the beef broth over everything so it's evenly distributed.
  3. Season lightly with salt and pepper if desired.
  4. Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours, until the beef is fork-tender and the vegetables are fully cooked.
  5. For a thicker broth, mash a few potato pieces against the side of the pot and stir them back in.
  6. Taste and adjust seasoning as needed.
  7. Serve hot.
  8. Keep the lid on as much as possible during cooking, since lifting it lets out heat and slows down cooking.
