Protein Bark

Ingredients

  • 1/2 cup Almond Flour (note 1)
  • 1/2 cup Vanilla Protein Powder (note 2)
  • 1/4 cup Peanut Butter (note 3)
  • 8-10 teaspoons Almond Milk (note 4)
  • 1/4 cup Maple Syrup (note 5)
  • 3 tablespoons Mini Dark Chocolate Chips (note 6)
  • 1/4 cup Dark Chocolate Chips
  • 1 teaspoon Coconut Oil (note 7)

Method

  1. Mix peanut butter, almond milk, and maple syrup together in a bowl.
  2. Add almond flour, protein powder, and mini chocolate chips, stirring to combine. Oil your hands and knead the mixture into a dough, adding more almond milk if it's too dry.
  3. Line a large plate with parchment paper.
  4. Press the dough onto the parchment into a bark roughly 6x4 inches, adjusting size and thickness as desired.
  5. Combine coconut oil and dark chocolate chips in a microwave-safe bowl.
  6. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted.
  7. Spread the melted chocolate over the top of the bark, leaving the edges uncovered.
  8. Freeze the bark for 10-15 minutes until the chocolate hardens.
  9. Cut into pieces with a sharp knife.
