Protein Bark

Ingredients
- 1/2 cup Almond Flour (note 1)
- 1/2 cup Vanilla Protein Powder (note 2)
- 1/4 cup Peanut Butter (note 3)
- 8-10 teaspoons Almond Milk (note 4)
- 1/4 cup Maple Syrup (note 5)
- 3 tablespoons Mini Dark Chocolate Chips (note 6)
- 1/4 cup Dark Chocolate Chips
- 1 teaspoon Coconut Oil (note 7)
Method
- Mix peanut butter, almond milk, and maple syrup together in a bowl.
- Add almond flour, protein powder, and mini chocolate chips, stirring to combine. Oil your hands and knead the mixture into a dough, adding more almond milk if it's too dry.
- Line a large plate with parchment paper.
- Press the dough onto the parchment into a bark roughly 6x4 inches, adjusting size and thickness as desired.
- Combine coconut oil and dark chocolate chips in a microwave-safe bowl.
- Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted.
- Spread the melted chocolate over the top of the bark, leaving the edges uncovered.
- Freeze the bark for 10-15 minutes until the chocolate hardens.
- Cut into pieces with a sharp knife.
