Crockpot Teriyaki Chicken & Ramen

Ingredients
- 1½ lbs boneless, skinless chicken breasts or thighs
- ¾ cup soy sauce
- ¾ cup brown sugar
- 1 tbsp minced garlic
- 1 tsp ground ginger
- 1 tsp sesame oil
- 1 tbsp rice vinegar
- ¼ cup honey
- 2 tbsp cornstarch
- 1 head broccoli, cut into florets
- 8 oz ramen noodles
- Green onions, diced
- Sesame seeds + peanuts for topping
- 1/2 yellow onion
Method
- Place the chicken in the slow cooker.
- Add soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, honey, cornstarch, and sliced onion; stir to combine.
- Cover and cook on low for about 4 hours, until the chicken is cooked through and tender.
- Shred the chicken directly in the slow cooker, then stir in the broccoli florets and cook for another 20-40 minutes until tender.
- Meanwhile, cook the ramen noodles separately according to package instructions.
- Toss the cooked noodles with the teriyaki chicken and broccoli.
- Top with diced green onions, sesame seeds, and peanuts before serving.
