Crockpot Teriyaki Chicken & Ramen

Crockpot Teriyaki Chicken & Ramen

Ingredients

  • 1½ lbs boneless, skinless chicken breasts or thighs
  • ¾ cup soy sauce
  • ¾ cup brown sugar
  • 1 tbsp minced garlic
  • 1 tsp ground ginger
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • ¼ cup honey
  • 2 tbsp cornstarch
  • 1 head broccoli, cut into florets
  • 8 oz ramen noodles
  • Green onions, diced
  • Sesame seeds + peanuts for topping
  • 1/2 yellow onion

Method

  1. Place the chicken in the slow cooker.
  2. Add soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, honey, cornstarch, and sliced onion; stir to combine.
  3. Cover and cook on low for about 4 hours, until the chicken is cooked through and tender.
  4. Shred the chicken directly in the slow cooker, then stir in the broccoli florets and cook for another 20-40 minutes until tender.
  5. Meanwhile, cook the ramen noodles separately according to package instructions.
  6. Toss the cooked noodles with the teriyaki chicken and broccoli.
  7. Top with diced green onions, sesame seeds, and peanuts before serving.
