Marry Me Chicken Tacos

Ingredients
- 1 small onion, finely chopped
- 1/2 tsp garlic
- 380g raw diced chicken breast (about 13.4 oz)
- 60g sundried tomatoes (about 2.1 oz)
- A few sprigs/ 1/2 tsp of thyme
- 1 tsp oregano
- 30g reduced fat red pesto (about 1 oz)
- Salt + pepper
- 70g reduced fat crème fraîche (about 2.5 oz)
- 90g mozzarella cheddar mix (about 3.2 oz)
- 7 mini wraps
- Fresh basil
Method
- Cook the chopped onion and garlic in a pan until softened, then add the diced chicken and cook a few minutes.
- Add the sun-dried tomatoes and continue cooking for about 8-10 minutes, until the onion is soft and chicken is cooked through.
- Stir in the thyme, oregano, and pesto, then season with salt and pepper.
- Transfer the mixture to a large bowl and mix in the crème fraîche and half of the grated cheese.
- Dip each wrap into the mixture to coat one side.
- Place the wraps saucy-side down in the pan, top each with a portion of the chicken mixture and remaining cheese, then fold in half.
- Cook a few minutes per side over medium-high heat until golden brown, then let cool slightly.
- Top with chopped fresh basil before serving.
