Marry Me Chicken Tacos

Ingredients

  • 1 small onion, finely chopped
  • 1/2 tsp garlic
  • 380g raw diced chicken breast (about 13.4 oz)
  • 60g sundried tomatoes (about 2.1 oz)
  • A few sprigs/ 1/2 tsp of thyme
  • 1 tsp oregano
  • 30g reduced fat red pesto (about 1 oz)
  • Salt + pepper
  • 70g reduced fat crème fraîche (about 2.5 oz)
  • 90g mozzarella cheddar mix (about 3.2 oz)
  • 7 mini wraps
  • Fresh basil

Method

  1. Cook the chopped onion and garlic in a pan until softened, then add the diced chicken and cook a few minutes.
  2. Add the sun-dried tomatoes and continue cooking for about 8-10 minutes, until the onion is soft and chicken is cooked through.
  3. Stir in the thyme, oregano, and pesto, then season with salt and pepper.
  4. Transfer the mixture to a large bowl and mix in the crème fraîche and half of the grated cheese.
  5. Dip each wrap into the mixture to coat one side.
  6. Place the wraps saucy-side down in the pan, top each with a portion of the chicken mixture and remaining cheese, then fold in half.
  7. Cook a few minutes per side over medium-high heat until golden brown, then let cool slightly.
  8. Top with chopped fresh basil before serving.
