Cheesy Beef Stuffed Tortilla Bake

Ingredients
- 8 flour tortillas
- 1 lb ground beef
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 oz cream cheese, softened
- ½ onion, diced
- 2 cloves garlic, minced
- 1 cup salsa or tomato sauce
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- Salt and black pepper, to taste
- 2 tbsp chopped parsley or cilantro
- 1 tbsp olive oil
Method
- Heat olive oil in a skillet and cook the diced onion until softened.
- Add garlic and ground beef, cooking until the beef is browned.
- Season the beef with chili powder, paprika, cumin, salt, and pepper; stir in the salsa and simmer a few minutes.
- Combine cream cheese with half of the shredded mozzarella and cheddar until smooth.
- Spread each tortilla with the beef mixture and cheese filling, fold, and arrange in a baking dish.
- Top with the remaining cheese and bake at 375°F for 20–25 minutes until golden and bubbly.
- Garnish with fresh parsley or cilantro and serve warm.
