Crockpot Enchilada Casserole

Ingredients
- 2 chicken breasts
- 1 packet taco seasoning
- 1 large can enchilada sauce
- 1 can Rotel (do not drain)
- 1 bag Mexican blend cheese
- 10 corn tortillas, cut into 6 pieces each
Method
- Place chicken breasts in the slow cooker and sprinkle taco seasoning on top.
- Pour the enchilada sauce and undrained Rotel over the chicken.
- Cover and cook on HIGH for 4 hours or LOW for 6-7 hours, until the chicken is tender.
- Shred the chicken directly in the slow cooker and stir in half of the cheese.
- Add the cut tortilla pieces on top and gently press them into the mixture.
- Sprinkle the remaining cheese over the top.
- Cook for another 30 minutes, until the tortillas soften and the cheese melts.
- Serve with toppings like sour cream, cilantro, avocado, or jalapeños.
