Chipotle Honey Chicken with Cilantro Lime Rice

Ingredients
- 2lbs chicken thighs
- 1 can Chipotle Adobo Sauce
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 2 TBSP lime juice
- 3 TBSP honey
- 1 cup washed jasmine rice
- 2 cups of water
- drizzle of oil
- 0.3 cups fresh cilantro, chopped
- 0.5 teaspoons salt
- 1 lime, juiced
Method
- Combine chicken thighs with chipotle adobo sauce, cumin, smoked paprika, salt, garlic powder, black pepper, lime juice, and honey; let marinate.
- Sear the chicken skin-side down for about 5 minutes per side, seasoning with extra salt as it cooks.
- Bring jasmine rice, water, and a drizzle of oil to a boil in a pot, then reduce heat, cover, and simmer until the water is absorbed and the rice is tender.
- Stir a drizzle of oil, chopped cilantro, salt, and fresh lime juice into the cooked rice.
- Slice the cooked chicken, toss with additional honey-adobo sauce, and serve over the cilantro-lime rice.
