Chipotle Honey Chicken with Cilantro Lime Rice

Ingredients

  • 2lbs chicken thighs
  • 1 can Chipotle Adobo Sauce
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 2 TBSP lime juice
  • 3 TBSP honey
  • 1 cup washed jasmine rice
  • 2 cups of water
  • drizzle of oil
  • 0.3 cups fresh cilantro, chopped
  • 0.5 teaspoons salt
  • 1 lime, juiced

Method

  1. Combine chicken thighs with chipotle adobo sauce, cumin, smoked paprika, salt, garlic powder, black pepper, lime juice, and honey; let marinate.
  2. Sear the chicken skin-side down for about 5 minutes per side, seasoning with extra salt as it cooks.
  3. Bring jasmine rice, water, and a drizzle of oil to a boil in a pot, then reduce heat, cover, and simmer until the water is absorbed and the rice is tender.
  4. Stir a drizzle of oil, chopped cilantro, salt, and fresh lime juice into the cooked rice.
  5. Slice the cooked chicken, toss with additional honey-adobo sauce, and serve over the cilantro-lime rice.
