High Protein Crispy Hot Honey Chicken Mac & Cheese

Ingredients
- 700g Diced Boneless & Skinless Chicken Breast (raw weight)
- 1 Tsp Salt
- 1/2 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Cayenne Pepper
- 1 Tsp Smoked Paprika
- 1 Egg
- 120g Cornflour/Cornstarch (not all of this is used, approximately 30 to 45g sticks to the chicken)
- 10g Light Butter (Nuttelex Light)
- 100ml Hot Sauce (Franks RedHot Buffalo Sauce)
- 50g Honey
- Dash of Cayenne Pepper
- 300ml Fat Free Evaporated Milk (Carnation Light & Creamy)
- 1 Tsp Chicken Stock Powder
- 80g Light Cream Cheese
- 100g Light Grated Cheddar Cheese (Dairyworks Natural Cheddar Cheese)
- 320g Macaroni Pasta (uncooked weight)
Method
- Mix the diced chicken with salt, onion powder, garlic powder, cayenne, and smoked paprika, then stir in the egg until evenly coated.
- Toss the coated chicken in cornstarch until each piece is covered.
- Arrange chicken pieces on a lined tray, spray with oil, and air fry until crispy, flipping and spraying again halfway through.
- While the chicken cooks, melt the butter in a pan and stir in the hot sauce, honey, and a pinch of cayenne until combined.
- Toss the crispy chicken in the hot honey sauce until fully coated.
- In a separate pan, combine evaporated milk, smoked paprika, chicken stock powder, cream cheese, and cheddar; stir over low heat until smooth.
- Cook the macaroni according to package directions, then drain.
- Mix the drained pasta into the cheese sauce until well coated.
- Portion the hot honey chicken and mac and cheese evenly into 4 meal prep containers.
