Keto Chili

Ingredients
- 3 slices bacon, cut into 1/2" strips
- 1/4 medium yellow onion, chopped
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 1/2 c. sliced baby bella mushrooms
- 2 cloves garlic, minced
- 2 lb. ground beef
- 2 tbsp. chili powder
- 2 tsp. ground cumin
- 2 tsp. dried oregano
- 2 tbsp. smoked paprika
- Kosher salt
- Freshly ground black pepper
- 2 c. low-sodium beef broth
- Sour cream, for garnish
- Shredded cheddar, for garnish
- Sliced green onions, for garnish
- Sliced avocado, for garnish
Method
- Cook bacon in a large pot over medium heat until crisp, then remove with a slotted spoon and set aside.
- Add onion, celery, bell pepper, and mushrooms to the pot; cook about 6 minutes until softened. Stir in garlic and cook 1 more minute until fragrant.
- Push vegetables aside, add ground beef to the pot, and cook until no longer pink. Drain excess fat and return pot to heat.
- Stir in chili powder, cumin, oregano, and paprika; season with salt and pepper. Cook 2 more minutes to bloom the spices.
- Pour in beef broth and bring to a simmer. Cook 10-15 minutes until the liquid reduces.
- Serve in bowls topped with reserved bacon, sour cream, shredded cheddar, green onions, and avocado.
