Keto Bacon Chicken Thighs With Garlic Cream Sauce

Ingredients

  • 4 slices bacon
  • 1 1/2 lb. bone-in, skin-on chicken thighs (about 4)
  • Kosher salt
  • Freshly ground black pepper
  • 1 small red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 small bunch of thyme
  • 3/4 c. low-sodium chicken broth
  • 3/4 c. heavy cream
  • 1/3 c. finely grated Parmesan
  • Finely chopped fresh parsley, for serving

Method

  1. Cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Remove to a paper towel-lined plate, leaving about 2 tablespoons of fat in the pan.
  2. Season chicken thighs with salt and pepper. Raise heat to medium-high and sear chicken skin side down in the bacon fat for about 5 minutes, then flip and sear the other side for about 5 more minutes. Remove chicken to a plate.
  3. Add onion to the skillet and cook until softened, about 5 minutes. Add mushrooms, season with salt and pepper, and cook until golden, about 5 minutes. Stir in garlic, then add broth, cream, Parmesan, thyme, and lemon juice. Bring to a simmer and cook 5 minutes.
  4. Return chicken to the skillet and simmer until it reaches an internal temperature of 165°F and the sauce thickens slightly, 10 to 20 minutes.
  5. Chop the reserved bacon and sprinkle over the chicken. Garnish with parsley before serving.
