Taco Salad

Ingredients
- 1 lb. ground sirloin beef
- Mexican spices
- Frozen bell peppers and onions
- 1 head romaine lettuce, chopped
- 1 c. grated cheddar cheese
- 1 c. halved cherry tomatoes
- 1 avocado, diced
- 1/4 c. chopped cilantro leaves
- Tortilla chips and sour cream, for serving
- Thinly sliced jalapeño or hot sauce (optional)
Method
- Heat oil in a large skillet over medium-high heat. Add the beef and cook 6-7 minutes, breaking it into small pieces.
- Stir in 2/3 cup water and the taco seasoning until combined. Add the black beans and stir gently. Cook about 3 minutes until beans are warmed through.
- Divide chopped lettuce among bowls. Top with cheese, the beef mixture, tomatoes, avocado, onion, and cilantro.
- Squeeze lime juice over each bowl and add a dollop of sour cream. Add jalapeño or hot sauce if desired, and serve with tortilla chips.
