Pumpkin Cinnamon Crumble Cookies

Ingredients
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 cup canned pumpkin puree
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup all-purpose flour (for streusel)
- ¼ cup granulated sugar (for streusel)
- ¼ cup brown sugar (for streusel)
- ½ tsp cinnamon (for streusel)
- ¼ cup unsalted butter, cold
Method
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
- Beat softened butter and brown sugar together until light and fluffy.
- Mix in the egg and vanilla extract until combined.
- Blend in the pumpkin puree until smooth, avoiding overmixing.
- Fold the dry ingredients into the wet mixture until just combined.
- Combine flour, granulated sugar, brown sugar, and cinnamon for the streusel; cut in cold butter until crumbly.
- Scoop dough onto the prepared baking sheet and top each mound with streusel, pressing gently.
- Bake 12-15 minutes until set and lightly golden, then cool on a wire rack before serving.
