Cheesy Broccoli, Chicken, and Rice Skillet

Ingredients
- 1 lb chicken breast
- 2 tbsp butter
- 1 onion, chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1 tbsp ranch seasoning
- 1 tbsp minced garlic
- 2 cups chicken broth
- 1 cup jasmine rice, rinsed
- 2 cups chopped broccoli
- 1 1/2 cups shredded Colby Jack cheese
Method
- Cut chicken into small pieces and roughly chop broccoli, keeping pieces sizable so they don't fall apart during cooking.
- Melt butter in a skillet over medium-high heat, then add chicken and onion in an even layer.
- Season with salt, pepper, paprika, and ranch seasoning; cook until chicken is nearly done.
- Stir in minced garlic, then add rinsed rice, broccoli, and chicken broth.
- Bring to a boil, reduce heat to medium-low, cover, and cook about 18 minutes until rice is tender.
- Stir in about a cup of shredded cheese until melted.
- Top with remaining cheese, cover to melt, or broil briefly in the oven until bubbly.
- Serve warm.
