Cheesy Broccoli, Chicken, and Rice Skillet

Ingredients

  • 1 lb chicken breast
  • 2 tbsp butter
  • 1 onion, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1 tbsp ranch seasoning
  • 1 tbsp minced garlic
  • 2 cups chicken broth
  • 1 cup jasmine rice, rinsed
  • 2 cups chopped broccoli
  • 1 1/2 cups shredded Colby Jack cheese

Method

  1. Cut chicken into small pieces and roughly chop broccoli, keeping pieces sizable so they don't fall apart during cooking.
  2. Melt butter in a skillet over medium-high heat, then add chicken and onion in an even layer.
  3. Season with salt, pepper, paprika, and ranch seasoning; cook until chicken is nearly done.
  4. Stir in minced garlic, then add rinsed rice, broccoli, and chicken broth.
  5. Bring to a boil, reduce heat to medium-low, cover, and cook about 18 minutes until rice is tender.
  6. Stir in about a cup of shredded cheese until melted.
  7. Top with remaining cheese, cover to melt, or broil briefly in the oven until bubbly.
  8. Serve warm.
