Cowboy Baked Beans

Ingredients
- 10 strips of bacon
- 1 white onion
- 1 red bell pepper
- 1 jalapeño
- 1 lb lean ground beef
- 1 tbsp your favorite bbq rub/seasoning
- 5 cups cooked beans of choice
- 1/4 cup brown sugar
- 1/2 cup bbq sauce
- 1/2 cup ketchup
- 1 tbsp worcestershire sauce
- 1 tbsp maggi seasoning (or use 2 tbsp of either worcestershire or maggi)
- 2 tbsp yellow mustard
- 1 tbsp chili powder
- 2 tsp smoked paprika
Method
- Dice the onion, bell pepper, and jalapeño.
- Cook the bacon in a large oven-safe pot or skillet until crisp, then remove and chop, leaving the rendered fat in the pot.
- Brown the ground beef with the bbq rub/seasoning in the same pot, breaking it up as it cooks.
- Add the onion, bell pepper, and jalapeño, and cook until softened.
- Stir in the cooked beans, chopped bacon, brown sugar, bbq sauce, ketchup, worcestershire sauce, maggi seasoning, mustard, chili powder, and smoked paprika.
- Simmer everything together, or transfer to the oven, until thickened and bubbly, about 45-60 minutes.
- Serve warm as a side dish.
