High-Protein Tacos with Cilantro Lime Crema

Ingredients

  • 1 lbs lean grass-fed ground beef
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp lemon pepper seasoning
  • 1/2 tsp kosher salt
  • 1 cup plain Greek yogurt
  • 1/4 cup low-fat cottage cheese
  • 2 tbsp fresh cilantro
  • 1/2 tbsp lime juice
  • 1/2 tbsp raw honey
  • 1/4 tsp kosher salt
  • 1/4 tsp lemon pepper seasoning
  • 1/4 tsp black pepper
  • Mild Salsa
  • Avocado, diced
  • Nacho tortilla chips, crushed (Siete Foods brand)
  • Flour tortillas, warmed
  • Romaine lettuce, finely chopped

Method

  1. Season the ground beef with chili powder, smoked paprika, cumin, garlic powder, onion powder, lemon pepper seasoning, and salt.
  2. Cook the seasoned beef in a skillet over medium-high heat until browned and fully cooked, breaking it apart as it cooks.
  3. For the crema, combine Greek yogurt, cottage cheese, cilantro, lime juice, honey, garlic powder, salt, lemon pepper seasoning, and black pepper in a blender.
  4. Blend the crema mixture until smooth and creamy.
  5. Warm the flour tortillas.
  6. Assemble tacos with the cooked beef, chopped romaine, diced avocado, crushed tortilla chips, salsa, and a drizzle of the cilantro lime crema.
