One Pot Lasagna Soup

Ingredients

  • 1lb ground beef
  • 1 small onion
  • 5-6 garlic cloves
  • 2tbsp tomato paste
  • 1 jar marinara sauce
  • 2 cups chicken broth
  • 2 cups beef broth
  • 8 lasagna noodles broken up into bite sized pieces
  • 1 cup heavy cream
  • 1 cup shredded mozarella
  • 1/2 cup grated parmesan
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • Fresh basil for garnish
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan
  • 1/2 cup shredded mozarella
  • Fresh chopped basil
  • Salt + pepper

Method

  1. Brown the ground beef in a hot pot, breaking it up as it cooks.
  2. Add chopped onion and garlic, cooking until softened.
  3. Stir in tomato paste and cook for 1-2 minutes.
  4. Pour in marinara sauce, both broths, and the seasonings.
  5. Bring to a boil, add the broken lasagna noodles, and simmer 10-12 minutes until tender.
  6. Reduce heat to low, then stir in heavy cream, mozzarella, and parmesan until melted and creamy.
  7. Mix together the ricotta, parmesan, mozzarella, basil, salt, and pepper for the ricotta topping.
  8. Serve topped with a dollop of ricotta mixture, fresh basil, parmesan, and red pepper flakes if desired.
