One Pot Lasagna Soup

Ingredients
- 1lb ground beef
- 1 small onion
- 5-6 garlic cloves
- 2tbsp tomato paste
- 1 jar marinara sauce
- 2 cups chicken broth
- 2 cups beef broth
- 8 lasagna noodles broken up into bite sized pieces
- 1 cup heavy cream
- 1 cup shredded mozarella
- 1/2 cup grated parmesan
- 1 tsp Italian seasoning
- ½ tsp onion powder
- ½ tsp garlic powder
- Salt and black pepper, to taste
- Fresh basil for garnish
- 1 cup ricotta cheese
- 1/4 cup grated parmesan
- 1/2 cup shredded mozarella
- Fresh chopped basil
- Salt + pepper
Method
- Brown the ground beef in a hot pot, breaking it up as it cooks.
- Add chopped onion and garlic, cooking until softened.
- Stir in tomato paste and cook for 1-2 minutes.
- Pour in marinara sauce, both broths, and the seasonings.
- Bring to a boil, add the broken lasagna noodles, and simmer 10-12 minutes until tender.
- Reduce heat to low, then stir in heavy cream, mozzarella, and parmesan until melted and creamy.
- Mix together the ricotta, parmesan, mozzarella, basil, salt, and pepper for the ricotta topping.
- Serve topped with a dollop of ricotta mixture, fresh basil, parmesan, and red pepper flakes if desired.
