Chocolate Cake with Chocolate Ganache

Ingredients
- 330 - 370g sugar
- 260 g all-purpose flour
- 75 g cocoa powder
- 2 tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 250 ml buttermilk
- 250 ml hot coffee (2 tsp instant coffee dissolved in 1 cup hot water)
- 1 tbsp vanilla extract
- ½ cup neutral oil
- ½ cup semi-sweet chocolate chips (optional)
- 1 cup chocolate chips
- ¾ cup heavy cream
Method
- Preheat the oven to 350°F.
- Whisk together sugar, flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk eggs, buttermilk, vanilla, and oil together.
- Combine wet and dry ingredients, mixing just until incorporated.
- Stir in the hot coffee gradually until the batter is smooth and thin.
- Fold in chocolate chips if desired.
- Bake 20-25 minutes, until a toothpick comes out with a few moist crumbs.
- For the ganache, heat cream until it just starts to simmer, without boiling.
- Pour hot cream over chocolate chips and let sit a few minutes.
- Stir until the ganache is smooth and glossy, then use to top the cooled cake.
