Korean Popcorn Chicken

Ingredients

  • 1.5 lbs boneless, cut into 1 in pieces
  • 4 tbsp soy sauce
  • 1 large egg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 cup potato starch
  • 1/4 cup gochujang
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp ketchup
  • 1 tbsp sesame oil
  • 5 cloves garlic
  • 1 tbsp butter

Method

  1. Cut chicken into 1-inch pieces and place in a bowl with soy sauce, egg, salt, pepper, and garlic powder; mix to coat.
  2. Toss the marinated chicken in potato starch until evenly coated.
  3. Fry the coated chicken pieces in hot oil until golden brown and cooked through; drain on a rack or paper towels.
  4. In a saucepan, melt butter and sauté minced garlic until fragrant.
  5. Add gochujang, brown sugar, honey, rice vinegar, and ketchup to the pan and simmer until the sauce thickens slightly.
  6. Add the fried chicken to the sauce and toss to coat evenly.
  7. Serve immediately, optionally topped with sesame seeds or scallions.
