Apple Pie Cheesecake Tacos

Apple Pie Cheesecake Tacos

Ingredients

  • 6 small flour tortillas
  • ¼ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • ½ cup heavy whipping cream
  • 2 large apples, diced
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar, packed
  • ½ tsp ground cinnamon
  • Pinch of nutmeg (optional)

Method

  1. Combine sugar and cinnamon in a shallow bowl; place melted butter in a separate bowl.
  2. In a skillet over medium heat, melt butter and cook apples with brown sugar, cinnamon, and nutmeg for 5–7 minutes until softened and caramelized. Cool.
  3. Beat cream cheese until smooth, then mix in powdered sugar and vanilla.
  4. Whip heavy cream to stiff peaks in a separate bowl, then fold into the cream cheese mixture. Refrigerate.
  5. Preheat oven to 375°F. Drape tortillas over an inverted muffin tin to form taco shapes.
  6. Brush tortillas with melted butter and sprinkle both sides with cinnamon sugar.
  7. Bake 8–10 minutes until golden and crisp, then let cool completely.
  8. Fill cooled shells with cheesecake filling and top with caramelized apples.
  9. Drizzle with caramel sauce or extra cinnamon if desired, and serve immediately.
