Twisted Apple Pie Rolls

Ingredients
- 500g bread flour
- 180ml warm milk
- 120g (½ cup) 5% Greek yogurt
- 1 egg
- 25g sugar
- 1 tsp dry yeast
- 1 tsp salt
- 1 tsp vanilla
- 80g melted salted butter
- 600g Granny Smith apples, peeled & diced as small as possible
- 50g salted butter
- 65g brown sugar
- 50g maple syrup
- 1 tsp cinnamon
- ½ tsp apple pie spice (optional)
- Pinch of salt
- Juice of ½ lemon
- 10g cornstarch + 15ml water (1 tablespoon cornstarch mixed with 1 tablespoon water)
- 2 tsp vanilla
- 120g powdered sugar
- 1–2 tbsp milk
- ½ tsp vanilla (optional)
- egg yolk + a splash of milk (for brushing)
Method
- Knead the dough ingredients together for 12–15 minutes until soft, smooth, and slightly tacky.
- Divide the dough into 12 equal balls, cover, and let rise for 1 hour.
- Meanwhile, melt butter in a pan and add apples, sugar, maple syrup, cinnamon, apple pie spice, and salt; cook 3–4 minutes.
- Stir the cornstarch-water slurry into the apple mixture and cook 1–2 more minutes until thickened.
- Remove filling from heat, stir in lemon juice and vanilla, then cool completely.
- Roll out each dough ball, add cooled filling, fold, cut, and twist into shape; let rest 20 minutes.
- Brush rolls with egg yolk mixed with a little milk.
- Bake at 350°F for 15–20 minutes until golden brown.
- Whisk together powdered sugar, milk, and vanilla to make the glaze.
- Cool rolls slightly, drizzle with glaze, and serve warm.
