Twisted Cinnamon Rolls

Ingredients

  • 500g bread flour
  • 230ml warm milk
  • 1 egg
  • 25g sugar
  • 1 tsp dry yeast
  • 1 tsp salt
  • 1 tsp vanilla
  • 80g melted butter or neutral oil
  • 170g softened butter
  • 150g brown sugar
  • 2 tbsp cinnamon
  • 1 tsp vanilla (optional)
  • 85g butter
  • 140g cream cheese
  • 120g powdered sugar
  • 1 tbsp heavy cream

Method

  1. Combine dough ingredients and knead for about 12 minutes until soft, smooth, and slightly sticky.
  2. Cover the dough and let it rise for 1 hour, until doubled.
  3. Mix softened butter, brown sugar, cinnamon, and optional vanilla to make the filling.
  4. Divide the dough into 10 balls and roll each into a 6-inch circle.
  5. Spread the cinnamon filling over half of each circle, fold over, then cut and twist to shape.
  6. Brush the shaped rolls with a mixture of beaten egg and a splash of milk.
  7. Bake at 350°F for 15-20 minutes, until golden brown.
  8. Beat together butter, cream cheese, powdered sugar, vanilla, and heavy cream to make the frosting.
  9. Serve rolls warm as is, or drizzle with cream cheese frosting.
